Communication strategies of sustainable restaurants

Sustainability in the restaurant industry is no longer just a set of operational practices, but a language that weaves together short supply chains, entrepreneurial values, and green technologies into a coherent narrative. The analysis of restaurants awarded the Michelin Green Star identifies six thematic dimensions – from short supply chains to green technologies, including community initiatives – through which restaurants build their sustainable identity. It highlights how the ability to communicate genuine commitment to the environment and society strengthens reputation, attracts new customers, and consolidates long-term loyalty. Dining thus becomes not only a gastronomic experience but also a tangible sustainability laboratory, where values, territory, and innovation converge to create enduring competitive advantage.
